2 cups finely chopped broccoli (fresh or thawed from frozen)

1 cup shredded sharp cheddar cheese

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup grated Parmesan cheese

2 large eggs

2 tablespoons all-purpose flour

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.

If using fresh broccoli, blanch in boiling water for 2 minutes, drain well, and finely chop.

In a large mixing bowl, combine broccoli, cheddar, Parmesan, breadcrumbs, flour, eggs, garlic, onion powder, salt, and pepper. Mix until fully combined.

Scoop about 1 tablespoon of the mixture and roll into balls. If sticky, lightly wet your hands.

Roll each ball in additional breadcrumbs if desired for extra crunch.

Arrange balls on the baking sheet and lightly spray tops with olive oil.

Bake for 20–25 minutes, until golden brown and slightly crisp.
