Baked Broccoli Cheese Balls

Tender, cheesy, and packed with nutritious broccoli, these Baked Broccoli Cheese Balls are the ultimate easy appetizer or snack! Golden on the outside, gooey and flavorful on the inside, they’re oven-baked for a healthier twist without losing a bit of that cheesy comfort we all love!

Ingredients

  • 2 cups finely chopped broccoli (fresh or thawed from frozen)

  • 1 cup shredded sharp cheddar cheese

  • 1/2 cup breadcrumbs (plus extra for coating)

  • 1/4 cup grated Parmesan cheese

  • 2 large eggs

  • 2 tablespoons all-purpose flour

  • 2 cloves garlic, minced

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Olive oil spray (for baking)

Instructions

 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.

  2. If using fresh broccoli, blanch in boiling water for 2 minutes, drain well, and finely chop.

  3. In a large mixing bowl, combine broccoli, cheddar, Parmesan, breadcrumbs, flour, eggs, garlic, onion powder, salt, and pepper. Mix until fully combined.

  4. Scoop about 1 tablespoon of the mixture and roll into balls. If sticky, lightly wet your hands.

  5. Roll each ball in additional breadcrumbs if desired for extra crunch.

  6. Arrange balls on the baking sheet and lightly spray tops with olive oil.

  7. Bake for 20–25 minutes, until golden brown and slightly crisp.

  8. Let cool slightly before serving — enjoy!

Notes

 

  • For extra crispy balls, use panko breadcrumbs instead of regular.

  • Make sure the broccoli is very dry to avoid soggy balls.

  • You can freeze the balls before baking for quick future snacks!

  • To make gluten-free, use gluten-free breadcrumbs and flour.

  • Spice it up with red pepper flakes or a dash of cayenne!
