- 1 sheet of puff pastry, thawed
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 teaspoon sugar
- Salt, to taste
- Freshly ground black pepper, to taste
- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 egg, beaten (for egg wash)
- Balsamic glaze, for drizzling (optional)
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the thinly sliced onions and stir gently to coat them in the oil and butter.
- Sprinkle in the sugar and a pinch of salt to aid in caramelization.
- Reduce the heat to low and cook the onions slowly for about 30-40 minutes, stirring every 5-10 minutes until they are deep golden brown and soft.
- Season with freshly ground black pepper and adjust salt if needed. Remove from heat and let cool slightly.
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the thawed puff pastry sheet to about 1/8 inch thick.
- Cut the pastry into squares or rectangles (about 4×4 inches).
- Place the pastry squares on a baking sheet lined with parchment paper.
- Score a smaller square inside each pastry piece, about 1/2 inch from the edges, without cutting all the way through.
- Brush the edges of the pastry with the beaten egg.
- Spoon a generous amount of caramelized onions into the center of each pastry square, staying within the scored border.
- Crumble goat cheese over the top of the onions.
- Sprinkle fresh thyme leaves over the goat cheese (or a sprinkle of dried thyme).
- Optionally, drizzle a bit of balsamic glaze over the assembled tarts.
- Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden brown and puffed up.
- Keep an eye on them towards the end to prevent over-browning.
- Once done, let the tarts cool for a few minutes on the baking sheet before serving.
- Serve warm or at room temperature as an appetizer or brunch item.
- For an elevated presentation, drizzle more balsamic glaze over the tarts and garnish with fresh thyme or microgreens.
Notes
- For best results, use high-quality goat cheese.
- These tarts can be made ahead of time and reheated in the oven before serving.
