  • 1 egg, beaten (for egg wash)

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the thinly sliced onions and stir gently to coat them in the oil and butter.
  3. Sprinkle in the sugar and a pinch of salt to aid in caramelization.
  4. Reduce the heat to low and cook the onions slowly for about 30-40 minutes, stirring every 5-10 minutes until they are deep golden brown and soft.
  5. Season with freshly ground black pepper and adjust salt if needed. Remove from heat and let cool slightly.
  6. Preheat your oven to 400°F (200°C).
  7. On a lightly floured surface, roll out the thawed puff pastry sheet to about 1/8 inch thick.
  8. Cut the pastry into squares or rectangles (about 4×4 inches).
  9. Place the pastry squares on a baking sheet lined with parchment paper.
  10. Score a smaller square inside each pastry piece, about 1/2 inch from the edges, without cutting all the way through.
  11. Brush the edges of the pastry with the beaten egg.
  12. Spoon a generous amount of caramelized onions into the center of each pastry square, staying within the scored border.
  13. Crumble goat cheese over the top of the onions.
