  3. Gradually add the warmed milk, whisking continuously to avoid lumps.

  4. Continue to cook and whisk until the sauce thickens, about 3–5 minutes.

  5. Stir in the salt, white pepper, and a pinch of nutmeg.

  6. Remove from heat and immediately stir in the Gruyère and Parmesan cheese until completely melted and smooth.

  7. Taste and adjust seasoning if needed.
