2 medium zucchinis (about 2 cups shredded)

Instructions

Shred zucchini using a box grater. Sprinkle with salt and let sit for 10 minutes.

Wrap zucchini in a clean towel and squeeze out as much water as possible.

In a bowl, combine zucchini, flour, Parmesan, egg, green onions, garlic, pepper, and baking powder. Stir until just mixed.

Heat 2 tablespoons of oil in a nonstick skillet over medium heat.

Drop heaping tablespoons of batter into the skillet, flattening slightly. Cook for 2-3 minutes per side until golden brown and crispy.

Transfer cooked fritters to a paper towel-lined plate. Sprinkle with a little extra salt and serve warm!
