Crispy and Easy Zucchini Fritters Recipe

Ingredients

  • 2 medium zucchinis (about 2 cups shredded)

  • 1/2 teaspoon salt (plus extra for seasoning)

  • 1/4 cup all-purpose flour

  • 1/4 cup grated Parmesan cheese

  • 1 large egg

  • 2 green onions, finely sliced

  • 1 clove garlic, minced

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon baking powder

  • Olive oil or vegetable oil, for frying

Instructions

 

  1. Shred zucchini using a box grater. Sprinkle with salt and let sit for 10 minutes.

  2. Wrap zucchini in a clean towel and squeeze out as much water as possible.

  3. In a bowl, combine zucchini, flour, Parmesan, egg, green onions, garlic, pepper, and baking powder. Stir until just mixed.

  4. Heat 2 tablespoons of oil in a nonstick skillet over medium heat.

  5. Drop heaping tablespoons of batter into the skillet, flattening slightly. Cook for 2-3 minutes per side until golden brown and crispy.

  6. Transfer cooked fritters to a paper towel-lined plate. Sprinkle with a little extra salt and serve warm!

Notes

 

  • For even crispier fritters, really squeeze out that zucchini — no mercy!

  • Feel free to add fresh herbs like dill, parsley, or basil for an extra flavor pop.

  • Swap the Parmesan for feta or cheddar if you want a cheesy twist!

  • To bake instead of fry: Bake at 400°F for 15-20 minutes, flipping halfway.
