Ingredients
-
1 cup unsalted butter, melted and slightly cooled
-
1 cup packed brown sugar
-
½ cup granulated sugar
-
2 large eggs
-
2 teaspoons vanilla extract
-
2½ cups all-purpose flour
-
1 teaspoon baking soda
-
½ teaspoon salt
-
2 cups chocolate chips (plus extra for topping)
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or cast iron skillet.
-
In a large bowl, whisk together melted butter, brown sugar, and granulated sugar.
-
Stir in eggs and vanilla extract until smooth.
-
Add flour, baking soda, and salt. Mix until just combined — don’t overmix!
-
Fold in chocolate chips, saving a few to sprinkle on top.
-
Spread dough evenly into the prepared dish and top with extra chocolate chips.
-
Bake for 25–30 minutes, until edges are golden and the center looks just set.
-
Cool slightly before digging in for ultimate gooeyness!
Notes
-
For an extra gooey center, slightly underbake the cookie pie.
-
You can swap chocolate chips for peanut butter chips, white chocolate, or even candy pieces!
-
Gluten-free flour blends work well here too — just make a straight 1:1 substitution.
-
Best enjoyed warm with a scoop of vanilla ice cream on top!
