  • ¾ cup water

  • Optional: 2 tablespoons chopped green onions or cilantro (for extra flavor in the dumplings)

Instructions

  1. In a large pot, heat coconut oil over medium heat. Sauté onion, garlic, and ginger until fragrant and translucent.

  2. Stir in curry paste and cook for another 1-2 minutes to bring out the flavors.

  3. Pour in vegetable broth, coconut milk, soy sauce, and brown sugar. Bring to a gentle simmer.

  4. Meanwhile, in a bowl, mix flour, baking powder, salt, and water to form a sticky dough.

  5. Add carrots, mushrooms, and snap peas to the simmering broth. Cook for 5 minutes until slightly tender.

  6. Using a spoon, drop small scoops of the dumpling dough into the pot. Cover and cook for 10-12 minutes without lifting the lid — the dumplings will puff up beautifully!

  7. Finish by stirring in lime juice. Taste and adjust seasoning if needed.

  8. Ladle into bowls, top with fresh cilantro, and enjoy!
