Easy Taco Stuffed Sweet Potatoes

Tender roasted sweet potatoes are loaded with juicy taco-seasoned meat and piled high with your favorite toppings for a fresh, fun twist on taco night. Ingredients

  • 4 medium sweet potatoes

  • 1 pound ground beef or ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)

  • 1/2 cup water

  • Toppings: shredded lettuce, diced tomatoes, avocado, shredded cheese, sour cream, salsa, jalapeños, cilantro (optional)

Instructions

 

  1. Preheat the oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and place them on a baking sheet. Bake for 45–50 minutes, or until fork-tender.

  2. While the sweet potatoes are baking, cook the ground beef in a large skillet over medium heat until browned. Drain excess fat if needed.

  3. Add the diced onion to the skillet and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds.

  4. Sprinkle in the taco seasoning and pour in the water. Stir well, then let it simmer for 2–3 minutes until thickened.

  5. Slice each cooked sweet potato open lengthwise and fluff the insides gently with a fork.

  6. Spoon the taco meat generously into each sweet potato. Add all your favorite toppings and serve immediately!

Notes

 

  • Feel free to swap in ground chicken, turkey, or plant-based crumbles for the meat!

  • Want it vegetarian? Use black beans or lentils instead of beef.

  • These are great for meal prep — store components separately and assemble just before eating.

  • To make it dairy-free, simply skip the cheese and sour cream or use plant-based alternatives.

  • The sweet potatoes can be microwaved if you’re in a hurry (about 8–10 minutes), but oven-roasting gives the best caramelized flavor!
