4 medium sweet potatoes

1 pound ground beef or ground turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)

1/2 cup water

Toppings: shredded lettuce, diced tomatoes, avocado, shredded cheese, sour cream, salsa, jalapeños, cilantro (optional)
Instructions

Preheat the oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and place them on a baking sheet. Bake for 45–50 minutes, or until fork-tender.

While the sweet potatoes are baking, cook the ground beef in a large skillet over medium heat until browned. Drain excess fat if needed.

Add the diced onion to the skillet and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds.

Sprinkle in the taco seasoning and pour in the water. Stir well, then let it simmer for 2–3 minutes until thickened.

Slice each cooked sweet potato open lengthwise and fluff the insides gently with a fork.

Spoon the taco meat generously into each sweet potato. Add all your favorite toppings and serve immediately!
