1 pound Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup freshly grated Parmesan cheese (plus extra for topping)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Trim the Brussels sprouts and slice them in half (quarter if they’re large).

In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, salt, pepper, and half the Parmesan.

Spread them out on the baking sheet, cut-side down, making sure they have space to roast properly.

Roast for 20–25 minutes, until crispy and golden around the edges.

Remove from the oven and immediately sprinkle with the remaining Parmesan.
