16 oz (about 450g) whole button or cremini mushrooms

1 ½ tablespoons honey

4 garlic cloves, minced

1 tablespoon soy sauce

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

Fresh parsley, for garnish (optional)
Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired for easy cleanup.

Wipe mushrooms clean with a damp cloth. Trim stems slightly if needed but leave them whole.

In a large mixing bowl, whisk together olive oil, honey, minced garlic, soy sauce, thyme, salt, and pepper.

Add mushrooms to the bowl and toss well to coat them evenly.

Spread mushrooms out in a single layer on the prepared baking sheet.

Roast for 20-25 minutes, stirring once halfway through, until mushrooms are golden, sticky, and caramelized.

Garnish with chopped parsley if you like and serve immediately!
