- 4 cups kale, chopped and stems removed
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the kale under cold water and dry it. Remove the tough stems and chop the leaves into bite-sized pieces.
- Massage the kale with a teaspoon of olive oil for 2-3 minutes to make it tender.
- Slice the peaches into wedges and rinse the blueberries. Thinly slice the red onion.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.
- In the bowl with the kale, add the peaches, blueberries, and red onion. Sprinkle with feta and walnuts.
- Drizzle the dressing over the salad, toss gently, and serve immediately.
Notes
- This salad is best enjoyed fresh, but you can store leftovers in an airtight container in the refrigerator for up to 2 days.
- The kale will continue to soften as it sits, so if you prefer a crunchier texture, it’s best to eat it right away.
