Ingredients

  • 4 cups kale, chopped and stems removed
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Rinse the kale under cold water and dry it. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Massage the kale with a teaspoon of olive oil for 2-3 minutes to make it tender.
  3. Slice the peaches into wedges and rinse the blueberries. Thinly slice the red onion.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.
  5. In the bowl with the kale, add the peaches, blueberries, and red onion. Sprinkle with feta and walnuts.
  6. Drizzle the dressing over the salad, toss gently, and serve immediately.
