White Chocolate Raspberry Tiramisu

  • 1 1/2 cups heavy cream

  • 8 oz mascarpone cheese, softened

  • 1/2 cup powdered sugar

  • 1 teaspoon pure vanilla extract

  • 2430 ladyfinger cookies

  • 1/2 cup raspberry preserves (preferably seedless)

  • 1 1/2 cups fresh raspberries (plus more for garnish)

  • 1/2 cup milk (or white chocolate liqueur for a grown-up twist)

  • Optional: white chocolate shavings for topping

Instructions

 

  1. Melt the white chocolate gently in a small saucepan over low heat or microwave in short bursts, stirring until smooth. Set aside to cool slightly.

  2. In a large bowl, whip the heavy cream to soft peaks.

  3. In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.

  4. Fold the cooled white chocolate into the mascarpone mixture.

  5. Gently fold the whipped cream into the mascarpone-white chocolate mixture until fluffy and fully combined.

  6. Quickly dip each ladyfinger into the milk (or liqueur), and layer them into the bottom of an 8×8-inch dish.

  7. Spread half of the mascarpone cream mixture over the ladyfingers.

  8. Dollop raspberry preserves over the cream layer and lightly swirl.

  9. Scatter a layer of fresh raspberries over the top.

  10. Repeat with another layer of dipped ladyfingers, mascarpone mixture, and a final sprinkle of raspberries.

  11. Cover and refrigerate for at least 4 hours, preferably overnight.

  12. Before serving, garnish with extra raspberries and white chocolate shavings if desired. Enjoy every dreamy bite!
