Winter Citrus Salad: Refreshing Recipes for a Healthy Season

This Winter Citrus Salad is a vibrant mix of juicy oranges, grapefruits, and pomegranates, drizzled with a tangy dressing and topped with fresh mint and optional feta cheese. It’s a refreshing and colorful dish, perfect as a light appetizer or side.

  • Total Time: 15 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale
  • 2 large oranges
  • 2 large grapefruits
  • 1 large lemon
  • 1 large lime
  • 1 cup pomegranate seeds
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

  1. Wash the oranges, grapefruits, lemon, and lime under cold water to remove any dirt or wax.
  2. Cut off the top and bottom of each fruit to create a flat surface.
  3. Stand the fruit upright on a cutting board and slice down the sides, removing the peel and white pith.
  4. Hold the peeled fruit over a bowl and slice between the membranes to release the segments. Collect any juice in the bowl.
  5. Place the citrus segments in a large mixing bowl, squeezing any remaining juice from the membranes into the bowl.
  6. Sprinkle the pomegranate seeds over the citrus segments in the bowl.
  7. Thinly slice the red onion and soak the slices in cold water for about 10 minutes to mellow the flavor. Drain and add to the bowl.
  8. In a small bowl, whisk together the extra virgin olive oil, honey, and the juice of the lemon and lime.
  9. Add a pinch of salt and pepper to taste, adjusting as needed.
  10. Pour the dressing over the citrus, pomegranate, and onion mixture in the large bowl.
  11. Gently toss everything together using a spatula or your hands, being careful not to break the citrus segments.
  12. Taste the salad and adjust the seasoning with more salt, pepper, or honey if needed.
  13. Chop the fresh mint leaves and sprinkle them over the salad.
  14. If using, crumble feta cheese over the top of the salad.
  15. Give the salad one last gentle toss to incorporate the mint and feta.
  16. Transfer the salad to a large serving platter or individual bowls, showcasing the vibrant colors.

Notes

  • For added flavor, consider chilling the salad for 30 minutes before serving to allow the flavors to meld.
  • This salad can be made ahead of time, but it’s best to add the mint and feta just before serving to keep them fresh.
