- 2 large oranges
- 2 large grapefruits
- 1 large lemon
- 1 large lime
- 1 cup pomegranate seeds
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled (optional)
Instructions
- Wash the oranges, grapefruits, lemon, and lime under cold water to remove any dirt or wax.
- Cut off the top and bottom of each fruit to create a flat surface.
- Stand the fruit upright on a cutting board and slice down the sides, removing the peel and white pith.
- Hold the peeled fruit over a bowl and slice between the membranes to release the segments. Collect any juice in the bowl.
- Place the citrus segments in a large mixing bowl, squeezing any remaining juice from the membranes into the bowl.
- Sprinkle the pomegranate seeds over the citrus segments in the bowl.
- Thinly slice the red onion and soak the slices in cold water for about 10 minutes to mellow the flavor. Drain and add to the bowl.
- In a small bowl, whisk together the extra virgin olive oil, honey, and the juice of the lemon and lime.
- Add a pinch of salt and pepper to taste, adjusting as needed.
- Pour the dressing over the citrus, pomegranate, and onion mixture in the large bowl.
- Gently toss everything together using a spatula or your hands, being careful not to break the citrus segments.
- Taste the salad and adjust the seasoning with more salt, pepper, or honey if needed.
- Chop the fresh mint leaves and sprinkle them over the salad.
- If using, crumble feta cheese over the top of the salad.
- Give the salad one last gentle toss to incorporate the mint and feta.
- Transfer the salad to a large serving platter or individual bowls, showcasing the vibrant colors.
Notes
- For added flavor, consider chilling the salad for 30 minutes before serving to allow the flavors to meld.
- This salad can be made ahead of time, but it’s best to add the mint and feta just before serving to keep them fresh.
